i have attended quite a few weddings without sharks fin and they don't usually inform beforehand.
hotels nowadays should have alternatives to sharksfin, you can check what they have. so far i have tried fishmaw, some serves herbal soup, i have also taken abalone soup.

I think it's okay not to tell them beforehand. You can just announce it before the food arrives.

i agree with candie. you can just tell them before the food is served. i'm sure they'll understand why you don't have a shark's fin in your menu.

I think if you're not serving shark's fin for a good cause then there's no harm in adding a little note maybe in your wedding invitation or announcing it before dinner is served! If not, maybe letting the elders know would be sufficient if they're more traditional. Your friends and people around the same age probably wouldn't really mind so don't worry so much abt it
