When to book a wedding banquet?

Hi, how early should we start to book a banquet? Any recommendations for high ceiling with no pillars?

As early as 2 years in advance. You can get it at cheaper prices when book early because inflation is forever going to increase the price. Plus the fact that hotels are usually fully booked about 1 year before the AD so its best to book early.

As early as possible especially if you are looking at those popular dates like 20 Dec 2012.
For high ceiling and pillarless ballroom, i think you can look at Swissotel Merchant Court?

We are looking at around later half 2012. Merchant court may not be our choice as we are hoping to book 30 tables or so and merchant court requires min 35 for weekend. How's Carlton?
