Options for Rice

Befitting the importance of the occasion, the rice or nasi that's served in a Malay wedding is also prepared specially. The following are the variety of rice dishes served in a Malay wedding banquet: Tomato Rice: Tomato (dicincang dadu), tomato puree, bawang besar, dipotong dadu, minyak masak, marjerin, halia, rempah tumis, sedikit daun pandan, sedikit air, 8 pot beras, serbuk perasa, and garam. As an alternative, Basmati rice (long grain rice) can be used instead of tomato rice. Butter Rice: Basmati rice, oil, butter (or ghee), red shallots, garlic, ginger, lemongrass, screwpine leaf, raisins, cashew nuts, shallots, water, carnation milk, cinnamon, cloves, star anise, cardamom, and salt. Arabian Fragrant Rice: Basmati rice, chopped chicken, carnation milk, tomato puree, butter biryani powder (meat curry), almonds, ginger, onion, garlic, shallots, cinnamon, star anise, gloves, cardamoms, mint leaves, screwpine leaf, fennel powder, and salt. Biryani Rice: Basmati rice, chopped tomatoes, potatoes, red onions, garlic, ginger, yogurt, chopped chicken and biryani spice mix. Sweet Corn Rice: Basmati rice, cinnamon stick, star anise, cardamom, red onions, garlic, pandan leaves, fresh milk, sweet maize, water, ghee oil, and salt. This is not only popular in weddings, but also in other Muslim festivities. In Singapore, it is specially popular among the ethnic Malay-Muslim community. This recipe goes well with stewed vegetable curry with lentils. Options for Main Course Daging Briyani is a beef mutton biryani that is served during special occasions like weddings and religious rituals. Acar timum, acar buahan and pacri nenas are popular side dishes for this special biryani dish. Ingredients: Beef or mutton cube, red onions, shallots, ginger and garlic, tomatoes, green chillies, tomato paste, ghee, oil, rempah tumis, rempah baryani, salt, sugar, yogurt, coriander and mint leaves. Daging Masala is a beef and lamb masala recipe from seasoned chefs catering to Malay weddings. Ingredients: Bay leaves, cinnamon stick, cardamom pods, whole cloves, fennel seeds, black peppercons, beef tenderloin, green chilli pepper, ginger root, garlic, ground turmeric, salt, coconut oil, mustard seeds, curry leaves, lemon juice, and black pepper.

Beef Rendang is made by simmering beef in coconut milk and spices until the liquid evaporates. It is best served with turmeric rice (nasi kunyit). Ingredients: Shallots, garlic, chilli peppers, ginger root, chopped lemon grass, coriander seeds, fennel seeds, cumin seeds, nutmeg, vegetable oil, beef stew meat, white sugar, shredded coconut, cloves, cinnamon stick, coconut milk, water, and salt. Ayam Masak Merah is spicy and sweet fried chicken, considered to be one of the most authentic Malay dish still served today. Ingredients: Whole chicken (cut into 8 pieces), ground turmeric, salt, fresh and dried red chilli peppers, garlic, onion, ginger root, sunflower seed oil, cinnamon stick, whole star anise pods, cloves, cardamom seeds, coriander powder, cumin powder, fennel powder, sliced tomatoes, green peas, ketchup, white sugar, water, and fresh coriander leaves. Ayam Korma (Chicken Korma) is popular dish in Indian restaurants in Singapore. Ingredients: 1 whole chicken, coriander powder, garlic, ginger, jintan manis, white pepper, green fresh chillies, ghee, cinnamon stick, cloves, grated coconut, tomatoes, lime juice, and salt. Ayam Biryani (Chicken Briyani) Ingredients: Onions, cashews, chicken, yogurt, garlic paste, salt, Basmati rice, oil, onions, cloves, cinnamon, cardamoms, bay leaves, caraway seeds, tomatoes, mace powder, grated nutmeg, corinader powder, red chilli powder, turmeric powder, green chillies, ginger, garlic, dried pitted prunes, milk, saffron (kesar), desi ghee, and fresh green coriander. Udang Galah Masam Manis is a Chinese-style sweet and sour prawn dish with a fascinating blend of flavors. Ingredients: King prawns, pineapple chunks, cucumber (seeded and cut), carrot, green bell pepper, red chilli, sugar, salt, white vinegar, ginger, onion, oil, tomato sauce, soy sauce, water, tapioca or corn starch, sesame oil and lychee (optional). Sambal Udang is a hot and spicy prawn dish in sambal recipe. It goes best with nasi lemak. Ingredients: Prawns or shrimp, vegetable oil, red onion, ripe tomatoes, tamarind paste, water, palm sugar, salt and sugar

Black Pepper Prawns is a famous and mouth-watering Chinese style black pepper prawn dish. Ingredients: king-size grey prawns, red and yellow bell peppers, Bombay onions, spring onions, and oil. Sweet and Sour Fish is a crispy fried fish fillet simmered in a sweet and sour sauce. Ingredients: sliced fish, grated garlic, ground ginger, lemon lime, salt, and ground pepper. Ikan Lemon is a fish fillet with lemon butter. Ingredients: fish fillet, salt, pepper, butter, parsley, lemon juice, buttery cracker crumbs, and paprika.

Ikan Masak Merah is a sweet and spicy Malay dish. In this recipe, the fish is deep fried and simmered in a spicy red sauce until it turns golden brown. • Sambal Goreng Pengantin is a dish rich in rempah and provides a unique taste due to its mixture of ingredients into a delicious blend. • Dalca is stewed vegetables with lentils. This dish is commonly served with biryani rice or tomato rice. • Acar Timun is a Singaporean pickle recipe with cucumbers as the main ingredient.
